Back into running, spring feelings, and goodwill haul!

Happy Monday, everybody! I had a really good week at work and am so happy that the weather is trying to change to Spring. The week was mostly uneventful, but I have plenty to share still. Let’s get into the recap!

Monday

Breakfast smoothie

I slept in a little bit today and had a slow, relaxing morning with my smoothie and Supernatural. I’ve loved this show since high school but stopped watching it for some reason. I tried to pick up where I left off, but I was super lost so I started it back from the beginning. It’s so good and if you’re into this kind of stuff, you should totally check it out.

soup and salad from Olive Garden

Lunch was minestrone soup and salad from Olive Garden. I love it when they bring this for lunch! It’s so tasty and doesn’t leave me in a food coma.

Homemade tomato soup and grilled turkey and cheese sandwich

Dinner was homemade tomato soup and grilled turkey and cheese sandwiches. Yes, I like them that burnt! This dinner was AMAZING, and I could eat it over and over. Another favorite from Cook Once Eat All Week!

Kyle and I cuddling on the couch

We spent the evening under our heated blanket watching Dexter! This is what most of our evenings look like right now.

Tuesday

I was up at 4 today to head to the gym for an arm day and incline walking! My arms are definitely the weakest part of my body, and I am loving making them stronger! Even if they are left shaking and feeling like jello afterwards 🙂

I had my normal breakfast smoothie for breakfast, Wendy’s for lunch, and baked salmon, carrots, and potatoes for dinner!

Wednesday

Chance and I headed out for a 3 mile walk/run before work today. It’s amazing how different 40 degrees feels in the dark versus in the sunshine haha We are currently planning on coming back to Indiana the weekend after we move to Tennessee because we’re signed up for the Indy Mini Marathon again this year so I need to kick my running up if I am going to be ready! I am hoping the weather turning a little warmer this week will help me too.

I had my breakfast smoothie after my run again. Here is my go to recipe!

  • 1 Frozen Banana
  • 1 Cup Cold Brew Coffee
  • 1 Cup Unsweetened Almondmilk
  • 1 Spoonful Chia Seeds
  • 1/2 Spoonful Coconut Oil
  • 4 Ice Cubes
  • 1 Scoop Vega Chocolate Protein Powder

Lunch was chili and chicken apple salad from Panera! Another favorite lunch option of mine.

I took Chance on a spin around our neighborhood when I got home from work because it was so nice outside! I am so ready for summer, it’s crazy.

Buffalo chicken casserole

Dinner was buffalo chicken casserole. Kyle loved it! If I was a spicy person, I would have loved it too but I am such a baby when it comes to hot sauce.

Thursday

Breakfast was my smoothie again. Lunch was a salad with peppers, tomatoes and chicken!

Driving with the windows down

Driving with the windows down is so good for my soul 🙂

Took this good boy on another walk after work today. I love how he sits and waits for his turn to cross the street.

Baked potatoes and sheet pan pizza

Okay this looks random, but it was so good! We baked little potatoes like we usually do, but we made the sheet pan pizza from our cookbook, and it is so good! It had turkey, pepperoni, mushrooms, olives, and peppers. Kyle’s had cheese on it too. It baked in the oven like a pizza just minus the crust.

Friday

I drank my greens and ate my verb bar before heading to the gym. I know this doesn’t look like much, but it gives me so much good energy!

I did 62 flights on the stairmaster followed by a few shoulder work outs. I have been reading up on non-pharmaceutical ways to help my migraines, and I read a lot about people getting relief by strengthening their shoulder muscles! It makes sense so I am going to start incorporating shoulder specific work outs in every week.

Breakfast smoothie followed by a little hodgepodge lunch! They brought a whole spread from Ruby Tuesday’s, and I got a little bit of mostly everything.

After work, we had a little date night at Target followed by Flix Brewhouse. Kyle and I are getting rid of a lot of stuff when we move and are in the process of picking out a few new decorations for our new home. It’s so fun to me, and I am so excited to decorate our new home together. After Target, we headed to Flix to eat dinner and see The Invisible Man. OMG you guys it was so good!! I highly recommend it.

Saturday

Alani Nu energy drink and Verb bar

I was up around 6 to prefuel for our Orange Theory class at 7!

This class was one of my favorites so far! It really challenged me in every way and made me feel so strong.

Panera smoothie and Supernatural

We were fresh out of all things smoothie related which is usually what I make us after our class on Saturdays so we stopped by Panera to pick up something on the way home. I had the blueberry peach smoothie with almondmilk. I definitely prefer to make smoothies myself because there are so many added sugars and fruit concentrates in ones from most restaurants, but it was sure tasty. 🙂

After getting cleaned up, I made an iced coffee and started in on our chores. I wasn’t planning on going through a lot of our stuff, but once I started, I couldn’t stop!

Kyle caught the fever too, and we ended up packing the car full with stuff for Goodwill. One of the best feelings in the world! We still have a lot of stuff to go through before we move, but this definitely was a good start 🙂

We worked until around 5, and Kyle took a trip to goodwill while I finished the laundry and got ready. We headed to Lexie and Shane’s to hang out and eat dinner with a group of friends. We got home around 10 and headed to bed!

Sunday

The time change really screwed me up this time around. I had a lot of trouble sleeping so I just got up and ate a verb bar and drank some iced coffee with almondmilk. Kyle woke up a few hours later, and I ordered breakfast from Wild Eggs! After eating, I felt like I could finally sleep so I laid back down for a while and felt so much better when I woke up!

Kyle took Chance out on a run in the afternoon. It was so nice out so I opened all the windows and doors and let the fresh air in. I worked on this recap and ordered a few things we needed from Amazon!

We spent the rest of the evening watching Netflix and just having some quality time together. I love Sundays 🙂

I just recently restarted watching Vampire Diaries and Grey’s Anatomy … I will have to add Supernatural to my watch list. I tried to get into Dexter and I think I just kept getting lost. I’ll give it another try.
I honestly prefer fall because I like it to be lighter in the morning and darker at night. I guess I am just weird. Which do you prefer?
I would have to say I really like online shopping for home decor through wayfair but I never turn down a day of shopping with my mom at Pier 1, HomeGoods, or Crate & Barrel! Do you have any stores you WON’T Shop at??

I could rewatch Grey’s a million times and never be sick of it! I totally understand that about Dexter. It’s definitely not a show you can just have on in the background. I missed like 5 minutes of an episode and had to go back because I was so lost haha
I definitely prefer it being lighter in the morning too! I love how it helps me wake up naturally.
I have heard so many good things about Wayfair and am excited to finally have a reason to use it when we move! HomeGoods and TJ are definitely two of my favorite stores to go to. I honestly don’t have any stores I won’t shop at that I can think of which definitely makes me want to become more conscious of the places I support! Do you??

      • Lindsay says:

Miriam, I will honestly shop wherever I can find what I am looking for with the craziness that is today’s economy I will be out there shopping, shopping, shopping to make sure that people keep their jobs no matter which company that might be from. (Steps off soapbox)
I love grey’s because you CAN have it on in the background and keep doing other things and come back and not feel completely lost. I am hoping that by the time I get to the current episodes they are available on Netflix because I hate commercials and hulu only has it with commercials right now! 🙁
How are your patients handling the COVID-19 worries??
